Overview Pastry Sous Chef at Mandarin Oriental Punta Negra, Mallorca. Join our Culinary Team. Responsibilities Develop new recipes and innovate desserts to enhance the hotel menu and engage customers. Decorate pastries with various icings to ensure beautiful presentations. Assist the Executive Pastry Chef with administrative duties, including scheduling and general team administration. Inventory management: monitor and order ingredients and supplies for the pastry section. Health and safety compliance: ensure the pastry section adheres to health and safety regulations. Collaborate with the Executive Pastry Chef and other kitchen staff to ensure product quality. Qualifications Culinary School/University Degree with at least 2–3 years’ experience as a pastry chef, ideally in luxury hospitality. Baking techniques: master the fundamentals of baking. Flavor combinations: balance and create innovative pastries. Patisserie expertise: variety of pastries, desserts, breads, and baked goods. Chocolate sculpting & sugar artistry: crafting intricate designs using chocolate and sugar. Food safety (HACCP): maintain a clean, sanitary work environment and adhere to standards. Menu development: create menu items in collaboration with the Executive Pastry Chef. Plating desserts: design and present desserts aesthetically.
